Purple Power Muffins

Ingredients
3 ripe bananas
1 1/2 cups strawberry/blueberry, mixed berries (fresh or frozen)
2 cups baby spinach, packed
1/3 cup sugar plus 1 tablespoon sugar (or 1 tablespoon honey)
1/3 cup oil plus 1 tablespoon oil
2 eggs
1 1/2 cups whole wheat pastry flour
3/4 cup oatmeal
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins or chopped dates (optional)
Serves: 16
Instructions
Preheat oven to 350 degrees F.
Blend peeled bananas, spinach and berries in food processor or blender until smooth.
Add eggs, oil, and sugar and mix until blended.
Add flour, soda, cinnamon, and salt and fold together until just blended.
Fill muffin tins coated with cooking spray or muffin cups 2/3 full.
Bake 20-25 minutes until a toothpick inserted comes out clean.
Cool on rack and enjoy.
