PowerUp Green Bean Wheat Berry Salad

Ingredients
1 1/2 cup booked wheat berries (1/2 cup uncooked)
1 1/2 tablespoons extra-virgin olive oil
8 ounces chicken breast cooked
2-3 cups fresh green beans, trimmed, cut into 1 1/2-inch pieces
2 cups corn kernels (fresh cut from 2 to 3 ears of corn or canned corn)
3 green onions, thinly sliced
1 tablespoon minced fresh marjoram or 1 teaspoon dried
1/2 teaspoon coarse kosher salt
2 tablespoons white wine vinegar
2 tablespoon minced shallots
1 teaspoon Dijon mustard
3/4 cup feta cheese, crumbled
Serves: 6
Instructions
In a saucepan combine 1 3/4 cups water and 1/2 cup wheat berries. Bring to a boil, reduce heat, cover and simmer for about 45 minutes or until tender. Drain if necessary. Set aside to cool.
Meanwhile, cut cooked chicken breast into 1/2 inch cubes.
Cook green beans in a saucepan of boiling water until crisp-tender, about 2-4 minutes. Drain. Rinse under cold water to cool, and drain.
Mix cooked wheat berries, chicken, green beans, corn and green onions in a large bowl.
Combine olive oil, marjoram and 1/2 teaspoon coarse kosher salt in a small bowl. Whisk in vinegar, shallot, and mustard. Pour over salad and toss to coat. Season to taste with salt and pepper.
