PowerUp Chicken Pita Pockets

Ingredients


4 mini-whole grain pitas (such as Joseph's Bakery Whole Grain Flax)

1 cup baby spinach


For filling:

1 1/2 cups cooked chicken, diced

1/4 cup non-fat Greek yogurt, plain

1 1/2 tablespoons mayonnaise

1 stalk of celery, diced fine

1/4 cup dried cranberries

1/4 teaspoon cinnamon

1 tables of honey, or less to taste

3 tablespoons slivered almonds, dry roasted

1/4 teaspoon salt

Fresh pepper, to taste

Serves: 4


Instructions


Combine all filling ingredients and mix well.

To serve: Slice open pita, stuff a little spinach into pocket, top with chicken salad and more spinach.
