Pineapple Pico de Gallo

Ingredients


2 limes, juiced

2 cups pineapple, trimmed and diced

1 cup sweet Vidalia or purple onion, diced

1 cup red bell pepper, diced

1/2 cup cilantro, chopped

1 serrano chili, seeds removed and minced

Salt, to taste


Makes: About 4 cups



Instructions

Toss lime juice, pineapple, onion, red bell pepper, cilantro, Serrano chilis and salt in a medium mixing bowl.


Eat immediately or set aside in the refrigerator to allow the flavors to blend.
