No-Bake Energy Bites

Ingredients


1 cup old fashioned oats

1/2 cup "no added sugar" peanut butter, almond butter, or sunflower seed butter

1/2 cup ground flax seed or wheat germ

1/2 cup dried fruit

1/3 cup honey

2/3 cup toasted unsweetened coconut flakes (optional)

1 tsp. vanilla extract


Instructions

1. Stir all ingredients together in a medium bowl until thoroughly mixed.

2. Let chill in the refrigerator for half an hour.

3. Once chilled, roll into balls about 1" in diameter. Store in an airtight container and keep refrigerated for up to 1 week. Makes 20-25 bites.
