Mixed Greens Salad with Mustard Vinaigrette

Ingredients


24 spears asparagus

6 cups washed mix of greens, springs greens, or mesclun

1/4 smaller red onion, very thin sliced

1 red bell pepper

Serves: 6


Instructions


Blanch asparagus for 1 minute.

Shock in cold water and drain.

In a beautiful bowl, toss the asparagus, green, onions, red pepper with vinaigrette.

Salt and pepper to taste.
