Mardi Gras Jicama Salad

Ingredients
1 lb. jicama, peeled and cut into matchsticks
1 red onion, julienned thin, 2" strips
1 red bell pepper, slice into 2" strips
1 green bell pepper, slice into 2" strips
1/2 cup mandarin oranges, drained
1/2 cup pineapple chunks, drained
Fresh-squeezed lime juice – 2 Tbsp or to taste
Fresh cilantro and/or mint, washed and chopped – 2 Tbsp or to taste
Serves: 8-10
Instructions
Slice all vegetables into strips.
Drain the fruit and toss into prepped vegetables.
Toss in the cilantro, mint and lime juice, to taste.
Let marinate at least two hours, mixing occasionally. Refrigerate.
Serve alongside any meal or as a colorful snack.
