Lisa’s Individual Chicken Pizza

Ingredients
1 boneless chicken breast, pounded flat
Salt, pepper, garlic powder and Italian seasoning, to taste
1 tablespoon pizza sauce
2-4 slices pepperoni or Canadian bacon (optional)
1 teaspoon oil (canola or olive oil)
2 fresh mushrooms, sliced
2 thin bell pepper rings (green, red, orange or yellow)
1 ounce mozzarella cheese, shredded
Serves: 1
Instructions
Preheat oven to 400 degrees
Flatten the chicken breast to make it an even thickness all over. Season with salt, pepper and garlic powder.
Place on a foil-lined baking sheet. Spread the pizza sauce over the top of the chicken then top with the pepperoni or Canadian bacon, raw mushrooms and green pepper rings.
Bake 15 minutes.
Remove from oven and top with mozzarella cheese.
Bake for 5 more minutes or until the cheese is melted and the chicken is cook all the way through.
Notes
If you have leftovers, you can freeze them, but the peppers may get a bit soft.
