Fiesta Brown Rice Salad

Ingredients

4 cups cooked brown rice

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 cup corn (fresh, frozen, or canned/drained)

1 cup black beans (cooked dried beans or canned - rinsed and drained)

4 tablespoons Italian dressing

1 teaspoon Chili powder

2 tablespoon fresh chopped cilantro

Serves: 4


Instructions


Combine 4 cups brown rice (cooked and cooled), diced bell peppers, corn, and black beans.

Add chili powder to Italian dressing. Toss with rice mixture. Sprinkle rice salad with chopped cilantro.
