Banana Apple Mini Pancake Kabobs

Ingredients
2 ripe bananas, sliced
1 cup quick or old-fashioned oats*
4 eggs
1 banana
1/2 cup applesauce
2 tsp vanilla extract (optional)
1 tsp cinnamon
kabob sticks or toothpicks
*Note: quick oats break down easier
Servings: 4 (16-20 pancakes
depending on pouring size)
Instructions
In a large bowl, add oats and whisk to break down into smaller pieces.
Add the rest of the ingredients to bowl and stir until blended.
Heat a lightly oiled pan or griddle over medium-high heat.
Pour or scoop batter onto the pan using a tablespoon for each mini pancake.
Once batter starts to bubble, flip each pancake and cook for a minute until slightly brown.
Serve mini pancakes with your favorite fruits and get creative making your own kabobs!
